Interview Summary

This is an interview with Tim Zombek, general manager of Sabio, a fine dining restaurant in downtown Lexington, Kentucky. He discusses his experience in the restaurant industry, in both Kentucky and New York. He states that he sees competition in the restaurant world as a good and healthy force and that he works to cooperate with the business as a whole. He also talks about the restaurant's using local ingredients.
